Herbed Pikelets with Pear & Blue Cheese Topping

Finger Food by Bay Books. This recipe took some time, but was easy. It is also very delicious.



Ingredients! Look at all the fresh herbs... yum!

Get your two eggs and milk into the same bowl!

Mix them together!

Prepare a bowl with your flour in it. Make a well in the middle and pour your egg/milk mixture in.

Mix everything together!

Add salt and fresh ground pepper.

Chop your parsley and sage!

Add them to the mix!

Should look something like this!

Heat a skillet and spray with Pam (or use a little bit of butter as I did.) Pour in a little batter.

When they start to bubble (notice the holes) they are ready to flip! They are exactly like pancakes.

This guy has an "o" face. haha :)

Mmmm... They should puff up, as so, when you flip them.

Finished! They look like pancakes, but smell much better. Set them to the side.

Get your cream cheese and blue cheese in a bowl!

Combine the two. I suggest letting it sit out to soften just a bit before trying to mix it together. It was a tough job!

Add your brandy to the cheese mixture! It will make it more wet and a little easier to mix. (I added a little extra, you know, for my homies) Set to the side.

Get your pear! I used this handy slicer to core the pear.

Chop the pear! Add to your cheese mixture.

After mixing in the pears, add the walnuts!

 Cut some of the pear pieces into thicker slices to be added on top.

 Put some of the cheese mixture on top of the pikelet and top with pear slices and fresh chives!

These are for the girls in my office! :)

This recipe was fairly simple, yet a little time consuming. Took about an hour all together. The flavors blended very well together. I may use a little less blue cheese next time because I found it overpowering, but it did go nicely with the pear. The brandy had a nice warm feeling as it made its way to the stomach.

Pikelets!
-1 cup self raising flour
-2 eggs
-1/2 cup milk
-2 tablespoons finely chopped fresh parsley
-2 tablespoons finely chopped fresh sage

Pear and Blue Cheese Topping!
-100g creamy Blue Cheese (I used Blue Castello)
-75g cream cheese
-2 teaspoons brandy (I used about 4)
-1 large ripe green pear
-1/4 cup toasted walnuts, chopped
-1/2 lemon (to squeeze on top of the pears when slicing them to prevent browning!)
-fresh chives
