Curried Red Cabbage Slaw

Another Best-Ever 30 Minute Cookbook by Jenni Fleetwood recipe! :)


Ingredients! Doesn't the cabbage look awesome... :)

Slice the cabbage, red pepper and red onion.

Mix the three ingredients together. I see you in there, peppers! You can't hide from me!
Measure out your vinegar and sugar.


Put the vinegar and sugar in a pot and start to heat until the sugar has dissolved.

How'd you get in there small piece of cabbage... Sugar is almost dissolved!

Again with the measuring cup... This is the vinegar/sugar mixture. DO NOT TOUCH IT. It will be a pain in the behind to get off of your hands.

Mix in with the cabbage, peppers and onions. It makes it nice and shiny.

Measure out your mayo and greek yogurt!  Mix!

After mixing the mayo and yogurt, pour over the salad.

Mix in the mayo/yogurt until all of the salad has been covered.

Get your raisins, pepper, salt and curry ready!

Add to the mixture!

After mixing it together, it should look something like this!

Storing it is easy! Chill the salad before serving. Before serving it, drain any excess liquid and stir.


This smelt so wonderful while I was making it! Curry is a delicious spice and reminds me of Ramen Noodles. I'm not sure if it should, but that is what it does!

What do you need for this delicious recipe?
-1/2 red cabbage, thinly sliced
-1 red bell pepper, chopped
-1/2 red onion, chopped
-4 tablespoons of white or red wine vinegar or cider vinegar
-1/2 cup Greek yogurt
-1/2 cup mayonnaise
-1/4 teaspoon curry powder (I used 1/2 teaspoon and could probably have used more)
-2-3 handfuls of raisins (I used two personal sized boxes)
-salt and ground black pepper
