Slow-Cooker Berry Cobbler

This recipe comes from Fix-It and Forget-It Lightly by Phyllis Pellman Good. I found it quite easy to prepare and very delicious! I wish I had ice cream to serve with it...

  Ingredients- minimal!



Combine 1 cup flour, 2 tbsp sugar, baking powder and cinnamon.

In a separate bowl, combine an egg, milk and oil.


Mix the wet combination with the dry mixture.

It should look like a batter- sort of thick.

 Spray the crock pot with Pam or any other non-stick spray.


Pour the batter into the crock-pot.

 Combine salt, remaining amount of flour and remaining sugar.

Rinse the raspberries and blueberries!

Mix the berries with the dry mixture until they are coated.

Put the berry mixtures into the crock pot on top of the batter you previously placed.

Cobbler all ready to go! High for 2 hours.

About an hour in- the berries are starting to get really soft and the sugar is caramelizing.

Looks almost like a jam... smells fantastic! Only about a half hour left!

What do I need to purchase for this recipe?

-1 1/4 cups all-purpose flour (divided)
-2 tablespoons sugar, plus 1 additional cup
-1 teaspoon baking powder
-1/4 teaspoon ground cinnamon
-1 egg
-1/4 cup skim milk (I used 2% Milk)
-2 tablespoons canola oil (I used Vegetable Oil)
-1/8 teaspoons salt
-2 cups unsweetened raspberries, fresh or frozen and thawed
-2 cups unsweetened blueberries, fresh or frozen and thawed
