Baked Tomato- Cilantro Chicken

This recipe comes from The Family Circle Cookbook- New Tastes for New Times by The Editors of Family Circle and David Ricketts. The cookbook was published in 1992.



Ingredients!


**All of these pictures were taken with my iPhone because I cannot find my camera charger! Sorry if the quality is not great.

 

Preheat the oven to 400!
 Ground cayenne pepper, salt and lemon juice.

The three mixed together. This is to coat the chicken. It was not nearly enough, so I tripled the ingredients.

Chicken coated in the lemon juice, cayenne pepper and salt. Set aside to sit for 10 minutes.

Chop your pepper, onion, garlic and cilantro. Set to the side.

Slice the tomatoes and set to the side.

Heat 2 tbsp of olive oil in a pan.

Place the chicken into the heated pan. You want to saute the chicken until they are lightly browned.

Flip the chicken and repeat the previous step on the other side.

Place lightly browned chicken on paper towels to drain. Set to the side.

After removing the chicken, add another 1 tbsp to the pan. Add the pepper, onion and garlic that you chopped earlier. You want to saute them until tender, but not brown them... about 4 minutes.

Remove the pan from the heat and add the chopped cilantro. Stir.

 Find your favorite kitchen buddy and grate some cheese!

Place some tomatoes in the bottom of a baking dish.

Put some of your pepper/onion/garlic/cilantro mixture on top of the tomatoes.

Put some cheese on top of the tomatoes and mixture.

 Place the chicken on top.

 Place the rest of the tomatoes, sauteed mixture and cheese on top of the chicken.

Bake at 400 for 20 minutes. 
Plate and enjoy!

*This recipe was very easy to make and super fast! It took less than 45 minutes to prepare and bake. 
*The flavors together were a party in my mouth!

Ingredients:
-1 tablespoon lime juice (I used one fresh lime)
-1/2 teaspoon salt
-1/8 teaspoon ground hot red pepper
-4 boneless skinless chicken breast (about 1 pound)
-3 tablespoon olive oil
-1 medium size onion, chopped
-1 medium sweet green pepper, chopped
-1 clove garlic, chopped
-1/4 cup fresh cilantro, chopped (I added a little more than 1/4 cup)
-4 medium ripe tomatoes
-1 cup shredded Monterey Jack cheese
-fresh cilantro for garnish
