Carrot-Walnut Bars w/ Homemade Cream Cheese Frosting

This recipe comes from the Better Homes and Gardens Old Fashioned Baking Cookbook. It was published in 1995. Easy and delicious... the perfect recipe.


Everything you need!

In your mixing bowl add the flour, brown sugar, baking powder, cinnamon and baking powder.

Mix the dry ingredients together!

Add the eggs (beaten), oil and vanilla.

 Mix all the ingredients together!

Shred your carrots!

Add the shredded carrots, walnuts and coconut to the mixture.

Mix all the ingredients together!

Add the mixture to a 13x9x2 inch greased baking pan.

 Mmmm... doesn't that look delicious already?? Bake for 20-25 minutes at 350 degrees.

Hooray! They have finished baking. Place the cake in its pan on a wire rack to cool.

You could frost it on the previous step.... butI used another rack and took it out of the pan.

Here it is flipped right side up!

While the cake is cooling, you can make the frosting! In your mixing bowl add the cream cheese (I used the whole block), butter and vanilla.

Mix the ingredients on high until it is light and fluffy. Gradually add 2 cups of the powdered sugar, beating it well. Only add in more if you need it to be a more spreadable consistency.

I only had to use two cups of the powdered sugar to get the consistency I wanted. It's perfect!

Spread the frosting over the cake!

The squares have been cut up and put into a container to be enjoyed at another time!

Carrot-Walnut Bars
-1 1/2 cups all purpose flour
-1 cup packed brown sugar
-1 teaspoon baking powder
-1 teaspoon ground cinnamon
-1/2 teaspoon baking soda
-2 beaten eggs
-2/3 cup cooking oil
-1 teaspoon vanilla
-1 1/2 cups finely shredded carrot
-3/4 cup chopped walnuts
-1/2 cup coconut

Cream Cheese Frosting
-2 3ounce packages cream cheese (I used 8 ounces)
-1/2 cup margarine or butter, softened
-2 teaspoons vanilla
-2 cups powdered sugar (perhaps 1-2 cups more)
